Cassoulet – Simple and Comforting French Stew!
Cassoulet originated from the Languedoc region of southern France, and originally consisted of haricot beans cooked in a stew pot with pork rind and seasoning. Over the years many different versions have evolved, and the recipe below is based on the Toulouse version. It’s open to interpretation of course, but don’t worry about authenticity; instead, just enjoy it for what it is – a delicious, rich dish that’s a classic of French country cooking.

  2. Lentils and Brown Rice Vadai

    Lentils and Brown Rice Vadai
Commonly sold as a street snack or in Indian food stalls across Malaysia and Singapore, this savoury fried snack is packed with spices and absolutely delicious. We like to think of it as a savoury donut! The word ‘Vadai’ usually indicates a range of Indian style fried savoury snacks. Other names for it is vadai, vade, wada and wadeh. To make this snack a little healthier, we’ve incorporated brown rice into this recipe. Making vadai is easier than it looks, but it does needs a bit of planning ahead as you need to soak the dhal and rice for 2 hours beforehand. This will soften it and make it easier to blend later. Makes approximately 15 portions.
