Fruit Gateau 

Ingredients:

  • 3 cold eggs
  • 90 gm plain flour
  • 100 gm sugar
  • 10 gm corn flour
  • ½ tsp baking powder
  • ½ tbsp ovalette
  • 15 ml melted butter
  • 30 ml fresh milk
  • 1 tsp vanilla essence

Instruction:

  1.  In a mixing bowl, whisk up all ingredients (except essence and melted butter) till thick.
  2. Lastly add in the essence and melted SCS butter. Mix well.
  3. Pour into lined cake ring 8-inch and bake at 180 degrees for 35-40 mins.

Cake decoration

Ingredients:

  • 200 ml non-dairy whipping cream
  • 80 gm almond flakes
  • Some strawberries/peaches/kiwi/raspberries
  • Some neutral glaze
  • Some sugar syrup or orange juice

Instruction:

  1. Whisk up the non-dairy whipping cream till firm. Slice cake into 2 pieces.
  2. Dap the cake with sugar syrup or orange juice. Spread some cream on cake and place some diced fruits on it. Place the 2nd piece of cake and repeat the steps.
  3. Place generous amount of almond flakes on the sides and glaze the fruits.
