Healthy Chicken Recipes: The Wondrous One-Pan Chicken and Vegetable Skillet
A healthy chicken meal that takes less than 30 minutes? It’s possible when you tuck in a vibrant mix of sweet potatoes and broccoli with chicken breasts — a one-pan meal wonder! Garlic, rosemary, paprika, salt and pepper are all you need to make the flavours in the chicken pop. If you happen to have cherry tomatoes, they make a brilliant addition as they sweeten and caramelise in the most delightful way when cooked in the pan. Got cherries, cranberries or raisins? Toss them in and let the flavours dance and skittle on the pan. If you haven't got chicken breasts, chicken fillets work as well! This recipe uses sweet potatoes and broccoli, but feel free to customise the meal with asparagus, cauliflower, corn or even red onions!


 2 skinless chicken breastsboneless
 1 large sweet potatodiced
 1 head broccoli
 8 small cherry tomatoes
 4 cloves garlicminced
 2 tbsp fresh rosemary
 1 tbsp paprika
 salt to taste
 pepper to taste
 2 tbsp olive oil



Line a tray with aluminium foil. Lay out sweet potato, chicken breasts, and broccoli.


Sprinkle garlic, rosemary, paprika, salt, and pepper evenly over the entire pan. Drizzle with olive oil.


Pop cherry tomatoes onto the pan.


Bake at 200°C for 35-40 minutes or until the chicken is cooked through and the juices run clear.


Your meal is ready to serve!
